Modular Meal Service (Week of 1/22/24)

Mary’s Organic Spatchcock 1/2 or Whole Chicken- Dry brined overnight then rubbed with sumac, garlic, dried and fresh thyme, and lemon zest. The chicken is then splayed out spatchcock style (when the chicken is cut into two halves and laid flat on a rack for quicker more consistent cooking) then slow cooked below 300 degrees.
Organic Riced Russet Mashed- creamed with organic Strauss milk, cream, butter, and finished with Redmonds and Maldon salt.
Organic Broccoli Rabe with Homemade Organic free-form Sausage-Hints of freshly ground fennel, toasty garlic, along with citrusy notes of backyard orange zest round out this delight. Put it on any bread, bagel, or pop tart. This is the stuff Rome was downing during their reign. Once the Great Italian Rapini Famine came, that was the end of the Roman Empire. But you don’t have to take my word for it 😉
