Modular Meal Service (Week of 1/26/24)

Organic St. Louis Ribs-Amino & Coconut Sugar BBQ style ribs made with Chef Charlie’s secret, seed-oil free, gluten free, gum free BBQ sauce. Oven baked and finished under the broiler to sticky-icky-icky perfection.
Small portion is 1/2 rack (approx 1.25-1.5 lbs of meat)
Large portion is a Full rack (approx 2.5-3 lbs of meat)
Organic Duck fat Potatoes- Chef’s choice of potatoes (depending on availability) gently simmered in spring water, garlic, bay leaf, and fresh thyme. Cooled and sliced then browned in a thin layer of duck fat. Next they are tossed with butter, garlic salt, Parmigiano Reggiano and plenty of fresh chives. Great cold or warm.
Super Garlicky Organic Green Beans- French green beans are blanched to perfect tenderness and blasted with heat in a cast iron (or wok) with macadamia oil and avocado oil. Once they begin to blister, I add shaved garlic and garlic salt. Simple, salty, and garlicky. My son and wife can’t get enough of these.
Small portion of sides is 1 container approx- 32 oz (appox 4-6 servings, depending on portion size)
