Monday 3/18 ordering deadline for pick up next week Wednesday 3/20 & Thursday 3/21 *please note that we have a truncated order window on Wednesday 3/20 due to our son’s performance at school. Organic Spatchcock Chicken- dry brined and slow roasted with organic garlic, lemon, butter, parsley, and thyme. The chicken is then splayed out spatchcock style (when the chicken is cut into two halves and laid flat on a rack for quicker more consistent cooking) then slow cooked below 300 degrees.

Small order is 1/2 chicken, regular order is a whole chicken

Organic Potatoes Boulangere- “Potatoes from the baker” these are peeled cut and cooked with bacon, onion, fresh thyme and stock. These will cook down until tender in the stock and finish with a nice glaze of butter and stock once reaching prime tenderness.

Grilled Yellow Squash and Zucchini-seeded and peeled seasoned piment d’esplette fresh and dry herbs finished with smoked Maldon salt.

Sides portioning: Small portion is 1 container approx- 32 oz (appox 4-6 servings, depending on portion size)

Large portion is two 32 oz containers
